Pro forma calculator
Illustrative 3-year pro forma for a cooler-backed custom-exempt mobile kill-and-cut business. Defaults match the business plan. Inputs marked placeholder are rough guesses with no local quote behind them; those marked sourced come from a cited source (shown under each input). Change anything; the tables update as you type and the link keeps your changes.
Results
Some inputs are not valid numbers. Results below are from the last valid scenario, if any.
Cash for owner = EBITDA minus debt service, before owner draw and income tax.
Sensitivity to cutting price (Year 3 staffing)
Service tier mix
Price tiers on the same unit and cooler. Full service: staff kill and cut under the company's Custom Permit (Option B). Coached: the owner does the work and the company advises only (Option E). Rent: unit plus cooler storage, owner does the work (Option D). Each tier is a legal configuration, not only a price: staff hands-on work on a Coached or Rent job makes it a custom-exempt job with the company as operator. Whether storing personal-use carcasses needs extra VDACS permits is an open question. Not legal advice.
Presets: Full service only (defaults) · Balanced 50/30/20 · Rental-heavy 20/30/50
Labor check
Staff hours per head by tier times head, against employee hours plus 2,500 unpaid owner hours. Payroll still follows the employee hours entered by year, so a Rent-heavy mix with default hours carries more payroll than it needs.
No static cooler (Option G)
Presets: Rolling onboard cooler, 8 slots, 7-day hang · 8 slots, 14-day hang. The presets drop the cooler, sewer and site lease but keep the $300k unit price; a 12-16 slot unit is quote-only, and 24/7 generator fuel, a separate chill compartment and delivery trips are not modelled.
Carcasses on the rail = head per week (50-week season) × hang days ÷ 7.
